So I just bought a can of Campbell’s Chunky Soup Wicked Thai-Style Chicken, Rice & Vegetables because several posters here on /ck/ raved about it and… it’s ok I guess and surprisingly spicy for Campbell’s soup but I don’t see me buying it again.

I had a similar off brand thai soup. Pretty gross in my opinion. People saying it's good are just people who like the exotic and not the soup.

Their creamy tom kha gai rendition in the Campbells Go! and Tom Yum, both, were full of lemongrass flavor (sadly discontinued) and both were better than your pictured, sadly enough.

But, you can hit them with some fresh thai flavors when you open it. Add some cilantro, sliced green onion, and squeeze of lime juice. You could also add more heat and pepper with a sliced red chili, or stir in of some good chile paste. A container of fried shallots works too, or a splash of fish sauce or rice vinegar. Canned usually needs a pick me up addition.
