Yeah I found the same. I think he actually doesn't squeeze it into a ball, but relies on his ice spoon. When I cook smashed burgers with my brother, we squeezed the meat into balls the first times too, but now we just form loose piles with the right weight and try to roughly form them into usable patties on the grill. Motz definitely knows his shit about what makes a good burger, especially the combination of toppings. I mean it's not rocket science, but his aversion for tomato ketchup, but love for mayonnaise really opened my eyes. As a German/Eruopean, you just use mayonnaise more sparingly and tomato ketchup on everything (fast food related). I recommend trying out his slug burger. Absolutely amazing for what it is imho.
