Only the peas were frozen because I can't get them fresh this time of year. In such a case I'd usually omit them but I honestly love peas, so I was going tonadd them one way or another.
The meat was from a fresh roasted chicken, and I made stock from the carcass yesterday. Simmered it for a few hours.
So today I cooked fresh onions, celery and carrots in butter, then made a roux with the stock. No canned "cream of chicken" bullshit. Used fresh thyme, parsley and a bit of dill becuase I love dill.
