What are your thoughts on MSG? I've always heard of it, but I wouldn't be able to tell you if I've ever had it.

What is it commonly used for? What are its applications? What do you commonly use it with? Is it as bad as people make it out to be?

You have. It's added to probably 98% of instant ramen, seasoning salts, bouillons/stocks, soup mixes, and any kind of seasoned processed food. Plus it naturally occurs in a bunch of foods.

MSG has a different flavor. It doesn't taste like very much on its own, vaguely off-sweet with a lingering aftertaste. It's not intended to replace salt, rather be an adjunct to it. Maybe I'm just not sensitive enough, but adding MSG to a well-prepared dish does very little. If there's already glutamate-heavy ingredients in the food, adding more MSG is going to have diminishing returns. However, if you make something that tastes bland or flat, a bit of MSG will make it taste richer and more interesting. Add too much and you'll get that odd MSG aftertaste. MSG is just one ingredient among many. It's not meant to be in everything. It's not going to make bad food taste good. When used properly you shouldn't tell it's there at all.

MSG is a salt of Glutamic Acid. As such, it doesn't have a salty flavor but a savory, meaty flavor. It is commonly used to enhance dishes in east Asian cuisines.

You can try, I tried experimenting with it a lot when I bought a shaker of it. I personally found it to not help most of the time. It also rarely ever hurt either. I did find that if you went overboard with it, it usually just made whatever high quality dish you made just taste like cheap prepackaged shit though.

It's good for dishes without a lot of ~umami~ in them, I sprinkle a bit in Annie's shells and cheese, since there's none in there otherwise, among other things

It's not bad as people say it is. There's not even real scientific documentation that implies it does all this bad shit. It's literally a boomer myth that's been going around for years. It's literally salt on steroids and makes food more delicious. I've never had a headache before with this stuff nor have I had hair falling out.
