You can wrap it and refrigerate it to try to preserve it, but it's no longer shelf-stable after it's opened. Personally, I prefer to use Better-than-Boullion. It's just better, and you can spoon out whatever size portion you need.

hypothetical: you make plain broth with your half stock pot. it just sits in the fridge plain. just water and stock pot. as long as you'd assume your prepared plain stock would last, i would say that's how long your open pot will last
but i am not an expert merely a weirdo on the internet
