It’s the fuckin best, i don’t think there is a cuisine i like more.

My favorite things to make are al pastor and homemade salsas. Fairly easy to make and insane amounts of flavor.

I like it for the same reason I like a lot of asian cuisine. It’s just so easy to develop deep flavors and it has all the key elements. Spice, acid, salt, sweet, it’s all there in almost every dish.

It can be nuanced too, but it’s so easy to make it taste good. Theres a reason these cuisines dominate in shows like top chef. You can get world class shit done in 40min, not wait 24hrs for your torchon to properly set.

It's barbacoa de res. usually made with potatoes, olives, diced peppers and a adobo with dried peppers and beer. Usually made for weddings and birthdays in Northern Mexico. One of the best dishes i've tried was a version with oxtail.
