butter and olive/sesasme oil are delicious, canola and grapeseed and all that are meant to be nearly flavorless.

you cant really fry in normal butter because it has milk solids in it that would burn. you can brown those millk solids by basically cooking your butter which makes brown butter which has many delicious applications. its possible to filter the milk solids out of brown butter which leaves you with clarified butter which you can fry in. if im not mistaken ghee is flavored clarified butter typically associated with indian food

good olive oil is peppery, grassy, vegetal, delicious. great as a topping, probably healthier than butter if you compare them directly but you should overdo this either. i mainly use it for salads, as toppings, in sauces, maybe in a sautee.

use the tasteless cheap oils for frying shit or saving your tasty olive oil for other purposes

lots of the other oils are memes in my eyes, shit like avocado. its probably a good thing to eat a variety of oils as variety is always good for your health but again it must be in moderation. other animal fats are also tasty but most definitely worse for the health of your heart but in small quantities you should be fine

The thing is, you can't really press most seeds used in vegetable oil (corn, canola, soy, and cottonseed) at home. It's a complex process. Even the seeds you can press at home, like coconut, olive, sunflower, and peanut, are incredibly time and labor consuming and use a shitton of said seed/nut.
For example, it takes 5 lbs of sunflower seeds in order to produce 1/4 cup of oil at home. And that's a much easier extraction.

Butter can only be used at low temp because it burns, unless you use clarified butter.
