If you had it growing up, it must be made with melty american cheese slices out of the plastic wrappers. It's like a s'mores; you can make it with better ingredients, and it'll be good, but it won't be nostalgic. Otherwise, feel free to experiment with any cheeses, particularly medium-soft cheeses like jack, gouda, or muenster. Plenty of butter in the pan to brown the pan.

Agree about the butter, frying it in butter is essential otherwise it's just toast with cheese. American cheese melts easier and might remind you of mom's cooking from the 80s, but good quality cheddar tastes better.

The best ones are made with slices of tomatoes from your garden and some slivered ham. Though it's always a good sandwich with whatever cheese you have in the Fridge.

Any pan will do, though cooking it in the 'ron just tastes better for some reason.
