Look for something like this, some kind of rye cracker or dense European style rye bread. Herring and cracker is enough, but if you want to dress it up real nice you can butter the bread and put slices of onion, tomato or hardboiled egg. While you're getting used to the taste, go for a single piece of herring on a big chunk of bread or cracker. If you have the herring in cream sauce, add a bit of curry powder to make a curried herring. I usually accompany my herring with pickles and ice cold shots of vodka.

Toasted rye. Barring that, slices of baguette.
I don't find that cream cheese combines well with pickled fish. The onions that come with the herring are just lovely, and you want a bread that can hold its structural integrity when you drizzle the brine or cream over.
