Dark or light?
Chinese people use Pearl River Bridge Soy sauce in their homes. Restaurants use Kikkoman or Lee Kum Kee.
For dipping, use tamari not true soy sauce. If you don't want to give your money to the commies, use Maggi (Swiss), Kimlan or Wan Jia Shan (Taiwanese, makes the commies cry).

I like Kikkoman, but I use Chinese soy sauce more often. Kikkoman I use for Japanese food though. My childhood hometown is home to a Kikkoman factory, and the smell in the surrounding area is so lovely.
