Road to Christmas edition.

>What’s Panettone and what’s Pandoro?
They’re two traditional and world famous Italian holiday sweets, baked and usually made from sourdough if you’re buying a high quality product.

>What’s the difference?
Apart from the shape, the main difference is the resting times for the sourdough (or other yeasts) which is the way Ionger for panettone, also the latter is aromatised with orange flavours and filled with fresh candied fruit (orange, cedar and lemon) as well as raisins while pandoro is plain and has a brioche like flavour. Also panettone can have an external frosting.
Both of these sweets are offered in multiple styles and flavours.

>Can I make my own at home?
Absolutely yes but it’s a long work and requires baking experience.

Usually cheap sweets sold in supermarkets and stores are as cheap as you pay for them but there are some exceptions.
Usually a good semi artisanal panettone costs around 20€ for 1 kg and high end artisanal ones made from famous bakeries can cost up to 40€ for 1 kg.
Ask for suggestions in the thread if you’re confused.

And now, a quick review of three high end panettone samples I bought to test the quality.

This is the panettone that won the Italian panettone cup, rated as the best ever (the traditional one), and its made by Sal De Riso (37€ 1 kg or 20€ 500 gr).

I bought the classic one, the Annurca one (with annurca apple, walnuts, Australian dried raisins and bourbon vanilla) and the Sottobosco one (with a mix of berries and with a frosting and filling of fresh vanilla cream). All of them are made with sourdough.

Extremely soft and moderately airy, the raisins are moist and there’s a lot of them (it’s the version without candied fruit), the orange zest flavour is predominant and you can definitely taste the butter. It’s delicate and elegant, very balanced and good.

Overall like the Classico but instead of the orange zest I could feel cinnamon, the raisins are soo good and moist and the apple has a good flavour even though it’s not sharp enough to come out over the other ingredients. Good amount of walnuts adds an unexpected crunchy note.

I apologise for the ugly picture but I forgot to take a picture with the whole panettone before.
So, this one has a ton of fresh fruit outside and a generous amount of cream, this is not the kind of panettone I dig (because of the cream) but it was very good and tasty.
The cream is really good and refreshing, the fruit adds a nice acidic touch but be aware of the messy experience while eating it (use a fork).

Conclusion: this brand is good although pricey, go for the 1 kg version also because the panettone is taller than these 500 gr samples. :D

$60 is waaaay expensive.

On Eataly.com (American website) there are some panettoni and pandori on sale for Black Friday but last week there were more choice however every single of them is good, they’re all mid range products.

Another good panettone maker that you can find in the US online is “Albertengo”.

Try to avoid Amazon because they sell imitations of the cheapest Italian supermarket ones (you can find a couple of good ones too but it’s risky).

Also if you have an Italian bakery or Italian neighbourhood like little Italy you can ask if there are bakeries that made their own.

My suggestion is, if possible: buy one panettone and pandoro now and try it to see if you like it, then if positive buy more for Christmas.

Cut a slice of Panettone and toast it on low heat until it caramelises without adding extra fats in the pan, the thing is already filed with butter.

There’s NOTHING better than a slice of toasted panettone for breakfast with a hot cappuccino, this procedure makes the panettone soft and warm with lightly crunchy exterior.

If you want you can make your own cream to go with, like the tiramisu cream with mascarpone cheese.

I'll come clean and say I'm Brazilian. We have many brands and types, chocolate flavored ones are by far the most popular. The chocolate is often laced with the yeasty flavor of the sourdough, though we we a little less fat in the dough itself. The more premium ones here go toe to toe with the most expensive Italian stuff I've tried in Italy. I've never gotten sick from it. We're surprisingly reputable in food products desu. Usually younger people have the extra truffle one with chocolate chips in the dough and then entirely smothered in a chocolate layer, like a gigantic truffle. The non truffle ones toast extremely well on a toaster oven, but Brazilians rarely do this, only in the cold south in Italian colonies.

This + you can always gently warm it by placing a slice or the entire panettone in the low temp oven or by placing it next to a radiator, the final step is toasting it in the pan for maximum pleasure.

But please try both methods because toasted panettone has and added external crunchy texture and the candied fruit gets softer, plus the heat makes the orange zest express a lot more.

Pic related can also be enjoyed with a little glass of orange liquor like grand marnier poured over the slice (or the liquor of your choice) or you can use a syrup like maple syrup or salted caramel for contrast, chantilly cream or tiramisu cream. The limit is your fantasy, but please keep it symple to avoid covering the flavour of the panettone.

When you open it you should always store the panettone in its plastic bag and seal it, either with a knot or using a clip, then place it in a dark place.

Like this it can last a week minimum, the worst that can happen is that it becomes a little dry but if you toast it in the pan it goes back to perfect again. If you eat 1-2 slices per day it will last between 5 to 10 days (weight 1 kg) depending on how big you make the slices.

A golden rule that works 95% of the time is that if the panettone comes in a cardboard box then it’s cheap.

Well Corso101.com ships to Norway but I can’t see the shipping prices because it asks me to register, however they have good panettoni if you want to buy some suggested ones.
Otherwise you can try from a local bakery who makes the real thing.

It was good but probably panettone is more suited to be toasted than pandoro, still lovely however.
