When ground into a paste, a teaspoon or two of anchovies can be a very nice addition to a batch of pasta sauce.

Kinda like a bay leaf, it doesn't add a clearly identifiable flavor, but enriches the overall taste such that you could clearly tell the difference if it wasn't there.

They’re essentially a salt substitute. Great finely diced and sprinkled on garlic bread, in salad dressings instead of salt, and mixed into tomato sauces. Also just a 1/4” or 1cm piece on a slice of crisp apple with goat cheese or other soft cheese is ace as fuck

Anchovies and mushrooms are the best pizza topping combo. When I make chicken liver and onions I also dice up anchovies andnthrow that in too, for some good salty flavor.

Fair warning, there is a ton of variance in quality between brands. The best brands, like pic related or ortiz, are absolutely magical. They also go for $5-$10 per jar. The cheapest stuff, like what you find in anchovie paste, tastes like nasty rotten fish. In between there is a spectrum between delicious and disgusting which limits how heavily you can use it in a dish without getting gross and fishy.

Think of them as more of a seasoning. Mash them up into oil with some garlic and herbs and rub on meat, potatoes etc. They go great in dressings and marinades.
