What cheese are good for mac and cheese? I'm thinking of using sharp cheddar, mozzarella and cream cheese.

Gouda and Cheddar work well. Especially smoked gouda or cheddar (not smoked both though, just one).

Cheddar (maybe mozzarella too) is kind of required for a good mac due to how it melts.

I would add a smol pinch of sodium hexametaphosphate (available on Amazon) so that your cheese sauce emulsifies perfectly with no graininess or separation.

I don't think the mozzarella fits the bill here. I'm sure it would still be fine but why not use a more flavorful cheese when you're already using cream cheese to add moisture. You can also use a can of evaporated milk to add both creaminess and moisture.

Maybe grate in some aged gouda to get an extra tang and flavor.
