Redpill me on dick. I'm doing thanksgiving alone this year and thinking I might do a duck for myself. What's a good price for a duck? Cooking tips? Seasoning/herb pairings? Wine pairings?

I was in Safeway today and saw one for ~$26. Nearly bought but I would have to partially freeze it if I bought it today if I wanted to cook on Thursday. I might pick one up at the closer Whole Foods on Tuesday but what's a good price?

It's like the same problem as chicken where the lean meat should be cooked less to be tender than the dark meat so roasting it whole doesn't exactly make sense except even worse because duck breasts are best medium rare.

If you're by yourself, part it out. Cook 1 piece at a time. Freeze the rest. It's an awesome project though. Absolutely worthwhile.

One of the best things is you'll get a lot of fat globs in the cavity and all around, and you render them out and get duck crackling + about 500ml of duck fat from 1 duck which makes the best roast potatos ever.
duck stock is also pretty great. you can reduce it, make a gastrique, and combine with some citrus juice to make an a'lorange sauce

Do not rub duck with fat, it has enough fat as it is that will render out of the duck. It is not chicken. It is a very fatty bird, I rendered a cup of duckfat from roasting my duck.

Anyway, here's what you can do:
>Dry brine the duck with salt, sugar, aromatics, chill uncovered overnight
>Quickly wash off the brine and pat dry
>Roast for 6-7 hrs at a very low temp
>Turn up the heat for 5 mins if the skin isn't crispy at the end of the cook time
