I'm embarrassed to admit it, but I've never had stuffed peppers before. I'll be rectifying that tomorrow. What should I stuff them with?

Cook some rice, let it cool a bit so it isn't sticky. Fry onions and garlic in some olive oil until fragrant, then add leanish ground beef. Salt, pepper, maybe some chili flakes, some dried herbs. Add some stock and simmer until reduced by half, then add your rice and stir together. It should come together without much excess liquid (as your peppers will cook out some of their liquid in the oven). When you're satisfied with the consistency, stuff it inside some cored peppers, top with cheese, then bake until the peppers are mostly tender and the tops are bubbly.

Cheddar goes great, so does a little bit of parmesan. Some people like to stir half the cheese into the mixture, others like it as a topper. It's up to you, but this is a good starting point that you can play with.

rice shrimp and salsa is pretty good, you can add or top with some cheese

you can do a lot with them. almost any red meat, any cheese and a nice starch. commonly I'll use sausage, white rice, a basic tomato sauce and a mix of mozzarella, sharp cheddar, and parmesan. I like green peppers the most for stuffing. go nuts with it man
