I've always done a 50/50 butter and pork-fat mix, but if I had duck fat, I'd probably use that... mind you, I'd probably be throwing some of the duck in the pie too.

My mother cannot seem to make a moist tourtiere. She makes the best cipate I've ever had, so I have no idea why she can't apply the principles of one meatpie to the other.
