I still drink a bit of it and it's okay but almost all the nutrition is in the yolks so I pour most of it in the trash/down the drain.

NO. Yolks can contain up to half, but generally are only slightly under. You throw away a ton of protein getting rid of the yolk.

Eggs and butter are a match made in heaven. If you go low carb you can eat as many as you want. For example I eat 4-8 every day.
