Future Neighbor is definitely cool for good simple homestyle cooking.

You kinda wrong about Maangchi though at least in terms of stock. When she makes soups she usually makes the stock quickly as part of the process of making it. At least for basic anchovy stocks. Her content is great.

I'll always recommend Chinese Cooking Demystified, though they're definitely guilty of the "this is the only ingredient that will work so just pick it up in the Weizhou province of China" kind of shit.

Souped up recipes is good. And Fuchsia Dunlop is amazing. These are all for Chinese food.

Recently started watching Not Another Cooking Show. Guy's down to Earth, talks about how to source ingredients and goes into detail on technique. Runs the gambit from traditional Italian to greasy stuff he made in his foodtruck. Every video feels like your building up basic knowledge. No bullshit fake sitcom "chefs" or meme recipes from cartoons or movies.
