Baby fern, basically. Flavor is kind of like asparagus/spinach combo, but crunchier than asparagus. They're great, one of the spring ingredients I really look forward to, along with peas, ramps, morels and rhubarb.

I like the flavor of those just fine and the colour is gorgeous but they have SO MANY SEEDS.

One that pops to mind right away for me are all the edible plants people have in their gardens already but they don't even know. Nasturtiums? Leaves, flowers and seed pods are all edible and have a gorgeous peppery spice to them. Queen Anne's Lace tastes like a mix of cartot and parsley. Daylilies are edible with a nice cucumber/melon type of flavor and can even be cooked like a vegetable. There are loads.

Also sunchokes. So insanely delicious, and so easy to grow the only problem you'll have is keeping them from taking over the garden.
