I did actually make a Mexican lasagne once. Made up a con carne then layered it up. Was pretty good.
I've also made it with tortillas as the sheets and stacked it up in a cake tin. The layers were

>Refried beans
>Chilli con carne
>Grated cheese
>Salsa of avocado, corn, tomato, red onion, lime juice, coriander
>Spread sour cream mixed with hotsauce on the bottom of the next tortilla
Make about 3 layers then bake it.
