my favorite dishes are kanom jeeb (crab and pork steamed dumplings with sweet soy dipping sauce) and mee krob (crispy fried rice noodles usually with pork, shrimp, and some sort of sweet soy dressing), but sadly mee krob is rather hard to find here

You must fry the curry paste for a minute in hot oil to release the fragrance. You can make curry in one pot what does it matter? I guess you could just deglaze the curry paste with some coconut milk and drop it into the pot but this is just stupid, curry is incredibly simple..

American Chinese food is culinary dogshit.

I don't usually buy Thai food cuz I find a lot of it isn't hard to make at home but, I love stir frying mushrooms with fish sauce and basil. And I make curry at home fairly often. The canned stuff isn't super cheap where I live, but it's delicious and a nice dish to use up any odds and ends in the fridge, like tofu, meat, or just about any kind of veg. I don't fuck with yellow that much, always have found it a little less interesting than green or red, but, I also want to make some chili paste at home and try that out, so maybe I'll attempt a good full-flavored yellow one with that.

What I remember as chinese food growing up as a young kid in Hong Kong

Americans have no idea how bad it really is. No one in china knows what the fuck beef and broccoli is or sweet and sour pork. Chinese food is disgusting. Literally the worst parts to eat of any animal. Makes sense because chinks are the race of humans closest to animals. They make disgusting noises when they eat, slurp everything, men in the streets lift their fucking wife beaters over their sweaty stomachs while laughing and chewing with their mouths full of food. Like what kind of idiot decided 2 sticks is the most practical way to eat grains of fucking rice. Starving Nigerians who eat grass have a better diet than the average chinese.
