I have pickled soft boiled eggs before. It's doable but there's a risk of one breaking open and making the pickle juice cloudy. Not really a problem.
Pic related were softboiled. Obviously not in beet juice, though.

Actually no, it's incredibly subtle. My friends and I tried them after only around a week of pickling and they were disappointed by how subtle the beet flavor was! Two weeks seems to hit the sweet spot.

Well yes. Yes I would because I love beets and and eggs. My ma would make pickled beets in a sweet brine with a kick of cloves. She would take the beets from the brine after a few months and throw in boiled eggs and boiler onions. Recap the jars and put them in the back of the fridge for up to a month. Called it a "cold pickling" method. Those beets, eggs and boiler onions were outstanding.

I've made them before.

Quite nice to chop them and add them to a potato salad, since it looks nice and the egg being picked makes it firmer, so it holds its shape better. It's also more flavorful than boiled eggs because of the brine. But other than that, I'm not a huge fan.

Pickled beets, on the other hand, though... great all around.
