Why is it so good bros. I like to glaze some pan fried prosciutto in balsamic vinegar and put it on top.

It's not bait I just really love aglio e olio.

It is great. I've been having it quite often lately cause it's so cheap and easy to make. I put parmesan on top though, and I don't care if anyone says it's not aglio e olio anymore.

Likewise, plus I like a squeeze of lemon as well. And am I in the wrong or does fettucine work much better than spaghetti for the dish?

>> No.15071264

>>15071161
I don't always have lemon but yeah it's good. I've only made it with spaghetti but I don't see why fettuccine or even tagliatelle wouldn't be great for it too.

Wow I love noodles too. I’m also too poor for meat!

I live in Italy. Italians put grated cheese on almost all the pasta dishes, including gnocchi and stuffed pasta. It's aglio e olio if it's something like https://www.cucchiaio.it/ricetta/spaghetti-aglio-olio-e-peperoncino/
Lemon juice is weird, but not the worst. Only place where it's considered a sin to put grated cheese is pasta with seafood since the old rule is that both don't mix, but I've seen people do it.
Spaghettini is the best one for it IMHO, basically thinner spaghetti.

Fuck no, it needs a heavy ragù. Try wild boar ragù (chingiale).

Also try penne and only putting in butter and grana. Really simple meal, but it's surprisingly good. Take the Italypill and embrace easy to cook, minimalistic, few ingredient dishes that mostly depend on quality of ingredients for good flavour.

This is a gimmick, right? No way something this simple is as good as people claim (I've never had it)

Grana padano. Or just use Parma. It makes no difference.

It's good if you like garlic a lot. I do, it's not the best thing, but its pretty good pantry pasta.

The OG recipe was literally garlic simmered in oil until golden, and then you add water and pasta. That's it. It's... fine? But it's much improved with the addition of pepper flakes, parsley, parmesan, and lemon juice. Nobody gives a shit if some wrinkly nonna would bitch about it, it's still just six ingredients but it hits the right balance of several flavors.

Great for a weekend lunch, great for a weekday dinner when you're strapped for time, and good overall fodder for a dinner date (add a nicely dressed salad and a mildly sweet white wine at your discretion).

I eat this all the time bc broke uni student. appreciate how tasty it is and being so cheap. and fuck off if you whinge about parmigiano, chilli flakes or parsley. its good shit and comes together in the time it takes for spaghetti to boil. 10/10 dish.

What would you call it if you use butter instead of olive oil? Sometimes when I'm running out of the good olive oil I make this with butter and thyme instead of olive oil and parsley. It tastes really damn good but it seems like selling it short to describe it as "buttered noodles"

Garlic buttered noodles....

I like to add a few pepperoncinis and some fresh Parmesan to mine
