In the future remember that high-moisture veggies should be salted beforehand and allowed to rest to draw off water. You can even press them or wring them lightly in a clean tea towel if you want. Likewise, fresh pulled-curd cheeses like mozz need to be applied carefully for baked applications where you're looking for the end product to still have some browning and crispiness.

Even working at a pizzaria with high powered ovens, multiple veggie toppings always need a bit of extra cooking because of the moisture of vegetables. Order a veggie pie, and basically get an undercooked one unless you ask for it well done.

Also, doing cheese like that I understand is aesthetically pleasing, but it just doesn't beat having the entire slice evenly coated in cheese

You need to get rid of the water in mozzarella first. Slice or simply pull it appart, press the pieces with your hand, apply a little bit of salt and let it dry out for a couple of hours or over night.
