There's a big damn difference between Sardines which are an ingredient and fake Mac & Cheese. Sardines are healthy with lots of good fats and oils, they make a great snack and there are lots of ways to use sardines in actual recipes:

Tuna is based. Literal chicken flavoured fish. Even the cheap Skipjack kind. The only bad ones are the ones canned with brine or mineral water.

Sardines always taste like ass. You can cover up the horrid taste and smell with spices, but you might as well spice your tuna and chikken.

Some varieties are good but they don't really have a flavour many people would consider fantastic. I like the smoke kinds.

I mostly have them for the nutritional content - protein, no carbs, Omega 3s, B12, Vitamin D. Also lower mercury than tuna/salmon.

Avoid the ones with soybean or sunflower oil.

Deenz are garbage for the most part.

However King Oscar olive oil one's are actually pretty good. They can whole body sardines (not chunks), smoke them, and use good oil (extra virgin).

Sardines are safe. Eat as many as you like. However, eat larger fish like tuna more sparingly, about 1-2 servings a week at most.

Larger fish, like tuna, have WAAAY higher amounts of mercury than smaller fish. That's because mercury is hard to eliminate once ingested, so larger fish consume more through the course of their lives, since they eat tens of thousands of smaller fish.
