raw oysters for an appetizer with a house made mignonette, pretty cheap, fancy af, benefits cognitive and sexual social intentions
if you can get ahold of them fresh of course, I recently tried some west coast oysters and they were too big to be enjoyable raw but east coast slurpers. actually <1$ apiece and 2/guest is already too many
>mignonette, easy and every restaurant fucks it up so its an amazing experience to have it done well
>2 parts champagne vin or any mild and aromatic option
>1 part shallots cut brunoise with a sharp nice that no squishing happens because that fucks the flavor
>roast some peppercorns in the oven, this alone is mind blowing, then crush them and add to taste

beef tendon salad is awesome
>get beef tendon
>steam for 4 hours in 5 parts water: 1 part soy sauce or pressure cook 2
>wrap tightly with plastic wrap and chill over night
>slice in 1/8 inch thick slices and toss in a marinade of soy sauce/rice vin/sesame oil/chillie/etc
>serve with mountain of green onions and cilantro
it's like beef gummies and I love it, also new experience for most people
