Jellied eels come from a time when elver weren't overfished, so there were huge numbers of eels in the Thames. They were sold as the absolute trash-tier roadside food, roughly hacked up and boiled; the jelly was from the eel itself, not added gelatin.

What the fuck is even the point of jellying it? Can't they drain the water before storing the eel chunks to prevent the jelly from forming? Doesn't the jelly fall apart in your mouth and water down the taste of the rest of your food? Does the jelly act as a preserving agent or something, help me understand the point of this. Even if it was traditionally served jellied, what was the original purpose?

the gelatin comes from the eel itself. it's essentially encased in eel parsley broth. back before fridges this kept the eels safe for consumption.
