Any advantage to grilling meat over simply cooking it on the stove inside the kitchen?

There is a different flavour that is produced when the fats and juices from the meat drip onto the flames and vaporize. Their vapor then sticks to the surface of the meat giving it that signature grilled flavour. That's why I always oil up whatever I'm grilling with just a but of oil to ensure even a plain chicken breast has some of that flavour.

it probably comes down to what you're tryin to make! direct-heat is nice, but some fish is a pain in the ass to grill & a good duck is best stewed in its own juices rather than torched, for example
