add peppers and a tomato and whatever spices
wait for it to cook for awhile, take off the lid to let out some fluids.
let it sit in the fridge for a week or two to really consolidate the flavors.
then put it on top of a pile of rice like a retard.

you can see how the excess liquid has run into the rice underneath. the most important thing for this is to simply stir it well before taking a ladle. cook it down with the lid off to remove excess liquid. don't add tomato sauce. I like to use 2 cans of crushed tomatoes and 8 oz of tomato paste. with 1.5 lbs of meat

that does sound good. imo sausage is underrated and underused as a base ingredient. you find it here and there, like in stuffed mushrooms, but it should be used more in things like chili, meatloaf, stuffing, hell even burgers maybe

maybe I should give it a shot in burgers. I've always liked using a blend of sausage and beef for many things. maybe I could even just replace the beef fat in ground beef with pork fat. the charcuterie book has you do that for a lot of sausages
