franz gluten free bread tastes decent, and toasts up pretty nicely. kind of a small loaf though, canyon bakehouse has a decent loaf, too.
peanut butter sandies made with almond flour
mashed potatoes and gravy with cornstarch as a thickener
chicken tendies with parmesan cheese as the coating
tacos with 100% corn tortillas
udi's pizza when you're lazy and dont want to cook
honestly since hipsters and hypochondriacs latched onto gluten free, it's gotten so much better. it's not at all the end of the world like it used to be.

make sure to stay away from coffee and other gluten cross-reactors though, they can set back your progress and make you think something was contaminated with gluten when it actually wasn't.

if your blood comes back clean for celiac's but gluten is still an issue for you, make sure to screen for non-celiacs' gluten intolerance (especially if you have family with celiacs) because the only evidence will be damage to your intestines instead of an IG response in your blood.

there are gluten free beers out there, and there's always hard cider. :) have you heard of the low FODMAP elimination diet? it's something that's helped me a lot. i was diagnosed with ibs after my celiacs test came back negative, and the doctor i was seeing at the time recommended it to me, along with finely milled acacia fiber. gluten is actually one of the big FODMAPs, and if your guts get too fucked up it leads to lactose intolerance eventually (which can be reversed by not eating trigger foods)
if you're full of gas seemingly all the time, have had your intestines shred themselves/ulcerate after meals, or find that certain foods can go through you almost undigested or in a disturbingly short amount of time (i can eat 3 ounces of apple and be shitting it out 30 minutes later. this is not normal), you should consider cross referencing your identified trigger foods with a FODMAPs list.

oh! for the holiday season you'll probably want pie. gluten free graham crackers are my go-to for pie crust. you can also use gluten free oreo-type cookies as a pie crust.
chestnuts and roasted sweet potato cubes with sausage and apple make really excellent stuffing for thanksgiving. watch out for any broths you use, sometimes they have gluten in them for some stupid reason.

I don't really have trigger foods or anything like that. I just have diarrhea all the time. And I have been living like that for over ten years. Doctors didn't take me serious enough and just this year I forced them to actually run tests and stuff.
I am usually also not too filled with gas.

They gave me two vials that I have to fill with crap and send it to the laboratory to rule out other stuff as well.

When I drink water early in the morning it comes back out 10 minutes later. Just pure brown water shit.

FODMAPs are specific types of short chain carbohydrates that some people have trouble digesting, causing them to instead ferment inside your intestines and give the person IBS type gastric distress. gluten is one of them, lactose is another really common one. fructans, which are present in foods like onions or garlic, are also pretty common trigger foods. fructose, which is in loads of fruits like bananas and apples. sorbitol, which is also present in apples but also found in beans. mannitol, which is present in foods like mushrooms, and various oligo-saccharides which are in foods like beans and nuts.
when you've been living with IBS for so long it can be really hard to identify trigger foods off the bat, since you've adjusted to life and your body has adjusted to just shitting everything out as liquid. regardless of whether or not your doctors are able to give you a conclusive diagnosis, you should really look into elimination diets as a potential treatment since it's a digestive issue. specific carbohydrate, low FODMAP, autoimmune protocol, low histamine diet, pretty much any medically oriented elimination diet is a good place to start because it'll allow your guts to get back to some semblance of normal over the course of a few months, and then you can start testing food groups out.
if you aren't already food journalling in some capacity, you really should be. even if you aren't writing down symptoms, just having a list of the foods you regularly eat will help you identify things you can eliminate for a few weeks to see if your symptoms improve at all, even if you don't go whole hog on a medical diet.

i, too, shat liquid for over 5 years. sometimes, it was green. occasionally, it had shreds of intestinal wall in it. now, i just don't eat foods with fructans or mannitol and i'm pretty much good to go.

i mean the nice part is that if it's not celiacs and it is just regular IBS, you can still probably eat all of those foods once you've figured out which ones make you shit your brains out, and which ones you need to be careful with so you can maintain solid healthy poops.

honestly if your ass is a chocolate waterfall you're probably mad constipated and could do with some fiber, as well. finely ground acacia or psyllium are great options, but you should probably stay away from inulin or flax.

I had extreme stomach pain, I couldn't digest fat and it would float in the toilet, I would only be able to sleep until 4am, I lost like 30 lbs, my hands and feet would periodically get super numb, I would get shakes for 15 at a time. I had extreme anxiety, depression, and suicidal thoughts (celiac does brain damage I guess). It's gotten much better since I started a gluten free diet, but I'm still not back to normal. Brew your own. Either with gluten free LME, sorghum LME or just regular beer with alph/beta amylase, clarity ferm and all that good stuff. If you do it right even wheat beers and imperial stouts go below 20 ppm gluten without affecting the taste.

Seriously though it's time to suck it up and become a good cook because you're stuck with your own cooking now. Forever.
For a start get a rice cooker and learn how to pan fry stuff like chicken breast, pork chops and so on. Just focus on dead simple recipes for a while and get the basics down, it's not that bad, lots of people do this even without a disease and it's cheaper and healthier

Yeah but the ones with good reviews are basically the only ones you can go to. Sounds like you need to schedule a visit with a nutritionist. Meat and potatoes is easy, so is rice and corn. Use those for your starches. King Arthur makes a good gluten free flour. You can pretty much make anything gf. Udis makes hamburger buns that are half decent, against the grain makes good frozen pizza. Just experiment with things and see what you like. You're gonna have to learn how to cook though.

there are beers out there that have been brewed to have reduced gluten per ppm (e.g. New Belgium's Glutiny, Omission, Glutenberg), however I find they make me feel sick if I have more than one or two

it's not 100% accurate since it has a small userbase but it's more trustworthy than google or yelp reviews - if someone with celiac gets sick, they'll tell you
