Imo ducks are delicious. But for some it's a love or hate kind of thing. Duck is an incredibly fatty bird with rich red meat. I wouldn't treat duck like chicken. Ducks are more a slow cook meat. I like to initially roast my duck after stuffing its breast and cavity with apples and resting him on a bed of tubers, winter squash, and I also like things like Brussel sprouts (you can replace those with cabbage or whatever suitable brassica you like)
I cook at about 300-325 rotating the bird every 30 minutes until the internal temp is 155.
Then I let the bird rest for 10 minutes. Eat a bit of what I want, then skin the bird, cut it up, and put it in a slow cooker with my homemade broth.
Before I put the leftover vegetables in the broth for stewing I drain the fat out of the pan. This fat is lipid gold. Save it and use it for whatever.

I then stew the duck on low until the meat falls off the bone and is fork tender. I save the large bones for rendering with my vegetable scraps I save in the freezer to make vegetable broth. I will literally use the duck until there is nothing left. And I savor every bit. Gonna roast one tomorrow.

As much as I love peking duck, it is a bitch to make, and despite foie gras being illegal they actually gavage ducks specifically for peking. There is also a certain way to slaughter and gut the bird for the optimal Peking, so I don't have a duck set up for it yet. I would recommend trying a braised duck for something similar.

I cannot imagine the indoor cafo system working for ducks. Ducks are waterfowl and they need to be able to submerge their heads to clean out their nostrils. Chickens are much dryer animals which is why the nipple watering system works best. When I was brooding my ducklings it was a damp nightmare. Even in asia where they raise tons of ducks for food, they do not spend their entire lives inside. It is common for massive herds of ducks to be used in rice paddies to control weeds and pests and to give the ducks their much needed water.

Ducks and chickens are both messy in their own ways. You need a good watering system for ducks because they are messy drinkers and like to splash around in their pools. Ducks also tend to have wetter shits.

Chickens are also destructive, they will peck and scratch up your lawn and since their shits are drier the nitrogen is less deluded and will burn pasture. Laying chickens do better in a backyard setting than ducks, as female ducks are INCREDIBLY loud.

Chickens are more assholey to each other, even if the male to female ratio is appropriate, the females will pick on each other. Ducks are flock animals and spend most of their time with their flock mates. They almost act as a uni brain. It's weird.

If you have a duck strongly imprint on you as a baby and you don't have a large flock it might be a pet to you. Same with chickens. But if the bird gets to choose the duck will pick it's own kind. Even call ducks, which were bred to be pets, seem to only tolerate human affection. There are much better pets if you want a genuine companion.

As an aside, fish collar is rather good for a cut that otherwise gets discarded. For all the jokes about eating fishheads, it's notable the cheeks are not just tender and delicious, but seen as one of the best parts of a whole fried fish. I remember a friend once describing a regional superstition of giving your best friend and/or lover the cheek of your fish at an important meal. There's also that wacky "eating the fish eyes first" thing the Chinese do, but that's just goofy.

Here is the duck before I put him in the oven.
I patted him dry and separated the skin from the breasts, then stuffed the breasts with peeled, cored, and salted slices of apples and stuffed his cavity with the same. The skin was then rubbed with salt, pepper, and marjoram. There is a lot of fat on this bird so there is no need to grease him. He is breast side down for the first 30 mins of cooking at 325 to release juices onto the veg. Afterwards I will flip him and baste him and the vegetables and resume roasting.
He has fresh parsley in between his wings mostly for decoration but I also wanted to see if it would add any flavor to the skin.

I am still a newbie with duck but I have done this method of roasting before and found success. Any advice would be appreciated. Next time I may try to scald the skin with boiling water to tighten it but idk.

Breast meat is flavorful, tender, and juicy, more like a nice ribeye than chicken imo.
And then of course the skin was crisp but rich, sweetened slightly by the apple.
I usually stew the bird afterwards but idk guys I think I'm just gonna chow down and then cook the remaining carcass.

The fat in the pan will be drained and used for making delicious potatoes and whatever else.

Just letting you know duck is VERY fatty. This is a photo of a quart jar. The white stuff is old duck fat and the melted butter looking stuff is all the fat rendered from roasting this duck. I am still rendering more fat off the skin
