Looks tasty. I probably would have added less meat, and melted the cheese over the crumbles to keep them locked in. Personally I think if you have stuff spilling out of your sandwich, that means you added too much.

I prefer medium rare to be honest. I think cooking it past medium is only acceptable if you have a sub-par piece of meat. You are just cooking all the flavor/fat out.

Chanko is the only thing I eat outside of oats for breakfast.

This is this week's batch. I did double meatballs and half the usual amount of nappa cabbage. Unfortunately I let my dashi reach full boil when I wasn't paying attention so the fishiness is a bit more pronounced than normal. Also I cut my negi too thick for my chicken meatballs so they didn't have the texture I prefer. Probably my fourth worst pot of chanko and only better than the first three I made. The pork meatballs on the other hand are the best I have ever made thanks to inspiration I got from a dream about cooking I had last week. Eery pot is a learning experience as I dial in the recipe to be perfectly tailored to my taste and desired texture.

I also included some kimchi in my dream recipe but not in this pot. I wanted to try the dream variations of the meatballs first to see how they work out. Next week I will load up some kimchi to see if a little spice can make it extra nice.

Picked radishes, pickled jalapenos, pickled onions... You can pickle a lot of things, however the comment is there because those are super basic pre-sliced pickled cucumbers from their wave cut pattern as opposed to literally anything else.
