The most crucial part really tends to be how the rations were stored after production. If a ration actually manages to go some 70-80 years being stored in a cool, dry place, without being damaged or tampered with, then you can expect, and Steve has proven, that the more shelf-stable menu options (i.e. the dry stuff that doesn't contain meat or fruit) will still be completely edible. He's had more bad luck than good, naturally, but that's only a given with food older than retirement age.
On the other hand, poorly stored rations can spoil VERY quickly, even before their use-by date. Steve has opened up at least a couple rations less than two years old that turned out to be mostly or entirely inedible, and went to the hospital and nearly died of botulism from a year-old Polish ration he ate before he started the channel.
