I've been getting in to homemade pasta, making my own pasta and using a 1:1 of semolina and white flour which is probably my favourite so far. As far as sauces I'm pretty comfortable with my fresh tomato sauce, and spaghetti aglio e olio, I'm wondering if people have advice to try next. I'm considering a pesto or maybe carbonara

I make vodka cream sauce from scratch. Doubles as a good reason to drink myself to sleep. Really spice it up by adding some chucked pork or ground. Also you could use chorizo, I've done that before and it's delicious with it as long as it's all spicy.

But gamelli noodles only!

Pesto Is kinda labory. Do it because home made pesto taste great but I always regret while doing it.

Keep in mind that fresh pasta is not a better alternative than dry pasta. It's that some recipe are better with it, but traditional recipes, especially the exported one are better with dry pasta.

On top of my mind dishes the requires fresh pasta are

> Lasagna
> Tortellini/tortellini
> Gnocchi
> Orecchiette with turnip tops
Avoid making pest or carbonara with fresh pasta , it taste better with dry pasta.

You don't use egg pasta, which is probably what you're making, with carbonara.

Since you're making your own pasta, I recommend starting to experiment with fillet pasta. Ravioli filled with spinach ricotta in butter sage is a classic.

It's enough for your meal and can be done in less time than the pasta takes to cook. Want more? Use a bigger mortar.

basically any sauce that requires time, dish washing, ingredient chopping, or cooking is more effort than grinding a mortar and pestle for 5 minutes while your pasta cooks. even carbonara requires you to beat eggs, grate cheese, chop guanciale, fry guanciale, grind pepper, you will have a pan, a chopping board and a cup to wash as well as just pasta pot.

the only way you could think pesto is more difficult than any of those is if you're a woman, child or cripple or otherwise allergic to the mildest of physical labour.

I highly doubt you can make a 2 serving of good pesto while you have pasta ready if you are alone.

Noone would risk of not having pesto ready while the pasta is cooked, since sometimes you have to leave pesto for salting, stirring, tasting and in general give some little but of attention to other things other than pesto
