Hey bros, in my family in growing up in Texas we always made a big pot of chili on Halloween. My dad would hold a bowl of it out to trick-or-treaters and say "hey, want some ice cream?," lol.

Anyways, what are your tips for good Texas chili? My folks made it from a packaged mix, but I want to level up and make the real deal tomorrow.

And no beans. Beans do not belong in chili.

Dumb boomer packets. You need to make your own chili paste, for one. Then look up a recipe for a proper chili con carne. Don't forget a side of homemade cornbread and toppings (sour cream, high quality sharp cheddar, avocado, jalapeno pepper slices)

Lots of actual chilies like arbol and whatnot, use beer to deglaze after you brown the meat, and a shitload of cumin. Don't forget to let it simmer at least a few hours

Jalapeño Cheddar Cornbread
1 Cup flour
1 Cup yellow cornmeal
4 Teaspoons baking powder
1 Tablespoon sugar
1 Teaspoon kosher salt
2 large eggs
1 cup buttermilk- regular or 2% with a small amount of white vinegar works fine.
3 Jalapeño- seeded, diced
1 Cup cheddar cheese

Combine dry ingredients into large mixing bowl. Add milk, eggs, diced jalapeños, and cheese. Mix ingredients by folding it together. Grease muffin tin makes 1 dozen per batch.

400 degrees for 25 minutes.

fuk you that shit taste on point, it sounds odd but so does cocoa powder, beer, coffee, and a bunch of other weird shit that turns out to be really good in chili. I got got the same reaction from people when i sauteed the onions/peppers in bacon fat but nowdays all competition chili uses a few strips of bacon then fries the veggies in its fat.
