pretty much with all the centraleuropean heritage. I will say, though, that last year I was on a trip to Cleveland with a friend who was getting married, and I'm always curious to try whatever regional stuff is on offer. And the two things that stuck out to me were that there was a LOT of bologna-based dishes (like tarted-up boloney-and-cheese-on-wonderbread-type-stuff, pretty shameless) and that german/polish/centraleuropean stuff like kielbasa, pierogi, and kraut were also pretty prevalent. So it does actually track, to me at least. There's a whole lotta Polish diaspora around Chicago but I don't see it culinarily to nearly the same extent than the impression I got in Cleveland.
