Why are most restaurants so retarded?

Seriously, I took a trip in DC and ordered pasta from 5 different restaurants over my stay. Not a single one of them cooked it right. It was either undercooked and starchy or completely overcooked. The sauces were also bland and it appears nobody had heard of salt before.

I find this to be a common theme in many restaurants across the nation, many of which are doing fine and have 4+ star reviews for some retarded reason. Why the fuck can't restaurants cook the simplest of items?

I've worked in a lot of restaurants and only liked three of them. There's bullshit high school drama from the front all the way to the back. Don't expect to see a chef who wants constructive criticism when he could get sucked off instead.

The one chef I had who did want the opinions of the underlings made excellent grits. Transcendent grits.

Nay my friend. I avoid chains, I am not a pig who wants to suckle off the profits of the locals.

All 5 were local restaurants, one had 3 locations in total. 3 were family owned and 2 owned by ethnic Italians. One was upscale and cost me $90 for a two-person meal.

None of them delivered. Even the upscale one handed me chicken parmigiana, only to find that they used shredded cheese mixed with cellulose. Probably kraft cheese.

I routinely find restaurants using awful ingredients, preparing them poorly, with ill trained waiting staff. The only good Italian restaurant I found was a Michelin star one, and the portions were obviously slim and unaffordable for regular consumption.

I am thoroughly disappointed. Only Mexican restaurants seem to even be aware that spices exist.

I think DC just has shitty food. I went in my high school years for a class trip thing and the one thing we wanted was good chinese food, we went to 3 different restaurants near and in China town and they were all fucking awful.

It needs to be firm, not starchy, not undercooked that it sticks to your teeth, and not overcooked so that it looks like it's soaked double it's weight in water.

Making good pasta might be the simplest job in the world, and the inability of many to perform this task leads me to conclude that most people are retarded and gay.

Take pasta. Cook it 3/4 of the way and plunge into 5 gallon pail of icy water. Into the walk in cooler. Make one or two like this every day.

When you get pasta order, grab it from the pail, into boiling water a minute or so. Drain and plate.

If making "baked lasagne" do same, except put pasta in tin serving dish, cover with meat sauce, cheese and into the pizza oven til cheese is lightly browned.

That's how they do it.

Pasta is stupid to get takeout though. And if you're eating in, going to a sloppa chain in Chinatown or downtown is a mistake. Protip, if you're near a convention center the food will be dogshit.
There's some good places around dupont or georgetown for nice tiny italian places. It'll cost you though. Btw a lot of those tiny places closed due to the kung flu so i highly doubt you ate at anything other than boca de pepo here.
