If I don't have time or I'm feeling lazy (and assuming I have flour tortillas), it'd be an egg & ham burrito with some tomato based spicy sauce, for acidity and juiciness. Might throw in a bit of cheese and a slice or two of avocado.

Also, a tuna salad with onion, tomato and avocado, with some salted crackers.

If I really, really don't have time, I'll blend a banana, a bit of peanut butter and flavorless protein powder with a stick blender, and chug down. Might add some rolled oats in there for extra satiety if needed.

well the portabella mushroom pizza is easy, just heat an oven to 300F and bake a portabella cap with cheese and toppings you like on pizza. for 30 minutes. The samosas were leftovers from another meal, they are like these https://www.thespruceeats.com/easy-vegetable-samosas-recipe-2098695 but I skipped the curry powder. The succotash came from trader joe's, I did put a little butter on it and salt and pepper. I just steamed it while the samosas and mushroom cooked and the salad has a greek dressing like this but with apple cider vinegar instead of red wine vinegar. https://www.runninginaskirt.com/healthy-greek-salad-dressing/ It all took about half and hour to make.

It's a mixture of vegetables, usually made with butter beans corn and some seasoning vegetables like bell pepper sometimes tomatos. The Trader Joe's version has soy beans in it, but it's still pretty good. Martha Stewart has a good recipe for it. https://www.marthastewart.com/348448/succotash my mom would make it and put ground beef in it sometimes and call it "scribbage".

Yes, I think there was something wrong with your portabellas. I usually make sure to use them the same day I buy them because they will pick up flavors from the fridge. Succotash is really easy to make and is great just by it's self for lunch or dinner. I highly recommend it, would be a good side for thanksgiving even.
most of my meals are, I really like vegetables. I eat meat or fish too sometimes. I had steaks on saturday and later in the week I am going to make chipped beef on toast.

I'll have to look into succotash some more, see how I can incorporate it into my meals

A hear ya, when I had room for a garden, I would love to work up ways to use every scrap of food that I grew. Meat is nice, but I can't eat too much of it and feel good about myself. When I flipped burgers for a living, the smell would turn me off from meat completely
