When making "buttermilk" pancakes with lemon juice, do you have to leave the lemon juice and milk together before adding the rest or can you just mix all the ingredients together and let the batter sit to curdle?

from experience, store buttermilk is much better than the lemon and milk homemade one. It just adds great flavor. But if you're dousing it in syrup then it don't matter i guess

Not sure what you mean by this but all the buttermilk I've seen in stores is cultured like yogurt. But it's harder to find full fat buttermilk and it usually has salt added.

the reason you add it to the milk instead of to the batter is because you're diluting the acidity if you add lemon juice to the batter. the point is to make the milk sour. it causes structural changes in the proteins of the milk.
you could get around this by adding a greater amount of lemon juice to the batter. however, the lemon may preferentially react with other basic molecules in the batter. plus it's going to be more acidic than you would otherwise want, because you added more lemon to it.

it's akin to just dumping flour, butter, milk, and cheese into a pot and cooking it all down and calling it a bechamel. there's a reason that the process is done in steps.
