I know that feel. I spent a lot of time trying to grow a starter on multiple occasions and it was really like trying to keep suicidal pet.

I also tried growing my own grapes, it took years to get to the point that I finally got a reasonable crop, then one day I added up all the money I spent on things to keep birds away, nets, goose chase, trellises, grape bags, time and effort and realized that when I finally got some the grapes had cost me about $20 a pound.

Some people say that when you spend the time to make something from scratch it makes it extra special and better.

In the case of sourdough bread and grapes that's bullshit. the grapes were never as big or as sweet as any I could buy and the bread was never even close to what I could get from any place that sold sourdough.

Some things are better, take less time, and cost way less to just buy them.

I've priced the stuff to make home brew beer and it's way cheaper and there less problems and a better more consistent product with even the cheapest swill.

I used to make my own pies, and they were damn good pies, but I could buy an exactly as good pie from the frozen food section of my grocery store. Sara lee and other companies had perfected the pie, all I had to do was bake it.

Same quality and less cost than I could make it.

Some things are better and less expensive than store bought but some things are not and never will be.

The solution to this is...
>keep backup jar in fridge that you only pull out once a week to feed
> dry out backup-backup and keep in chunk for that you replace every six months.

I'm thinking about planting grapes this coming spring, but leaning towards just sowing a bunch of wild varieties that ought to be able to make it on their own without much interference from me

Honestly, it's only discernable on the small scale. When you're doing 600+ loaves at a time, you can get into a good rhythm of proofing/dividing/rounding/shaping/proofing/baking and it all flows really well. I don't even have to think about it anymore.

That's because you made the wrong choice anon. Patricians go for apples/cherries/pears for fruits. You don't have to do anything, just gather the fruits for a few weeks every year and make just about anything with them.
Also if your pies don't taste better than frozen ones, you're either shit at cooking or shit at tasting food.

you can just pay someone else to do all of that and do the last two parts yourself homie

Bake more loaves at once you retard. At least two. And it’s not that much work. You’re waiting most of the time.
