Give me your Mac n' Cheese recipes.

My best one is a buffalo mac that uses Frank's red hot, popcorn chicken and plenty of cheddar.

My laziest is kraft & spam, I don't use any milk or butter, I just pour the powder into the slightly wet noodles and stir.

When I was poor and in college I'd make cheesy chicken mac & cheese. It was just like, easy mac, chicken ramen powder, and lawry's seasoning salt. Was surprisingly great.

2 cups milk
4 tbsp flour
4 tbsp butter
1 tbsp mustard powder
12 oz grated cheddar
soy sauce
green onion

Melt butter, add flour and mix until smooth, add mustard powder. Slowly add milk while stirring. Bring to a simmer and wait until it thickens. Set heat to low just to keep warm, wait until it stops bubbling so cheese won't split when added and then add the cheese. Instead of salt I just like to add a little soy sauce, makes it taste a little more savory. And I add green onion to taste over the top of it after it's all put together. Might sound weird but it tastes good as long as you don't use too much.

I make this cheese sauce pretty often still but don't actually use macaroni. I started making some dense bread and serving the sauce over bread cubes instead, like fondue or Welsh rabbit. Just seems to taste a lot better than it does with macaroni.
