I still don't believe that you're doing the numbers you claim with only 3 line cooks, let alone selling that many wings in a night without them being par cooked. Occupying a fryer basket for 10+ minutes is pretty ridiculous no matter what it is. The numbers just don't add up if you only have 2 fryers and are presumably doing fries and other shit.

Next weekend I’ll show you the numbers on the computer, then you’ll shut the fuck up about it. In this kitchen we have a grill and two fryers. I cook all the food besides salads and cold cut sandwiches. I work in Florida and it’s hot all the time so a menthol ciggy is nice. Twisted tea is also nice in a hot humid environment. It’s 24oz of non carbonated drank. The American spirit menthol was also nice. I smoke Kool’s so it was a nice change of pace as it smoked for a longer amount of time.

I took over the night shift position 6 years ago. I work 50 hours a week wed-sun and make roughly 60k doing it. The place has been a gold mine for the owner for decades and I’m happy to make money and save for my own place one day. Sometimes the work sucks but you have to be looking towards the future to stay motivated. I’ll have my own business one day and that’s what will keep any decent chef happy to come into work.

No the wings are not frozen. I don’t temp the wings as I cook them i wait for them to look as crispy as I would want them served to me. We toss our wings in a tomato based sauce so as soon as they’re tossed that’s the most crispy they will be. Tomato is acidic and if something sits in an acidic sauce it will start the soggy process. I don’t know where you work or how your wings look but if you are frying them just to temperature doneness and then tossing them I would guess they come out soggy and not crispy.

Parfrying a chicken wing will never taste the same as a fresh wing. On our menu we state that everything is cooked to order. Our customers knows that ordering chicken wings will take a good minute to prepare. We understand that we are a pub and that food shouldn't take long to come to then table/bar but we reserve the right to say our food is always cooked to order and that you will love the shit

I've only worked in a few places but I've never not seen wings go in frozen. maybe not with giant chunks of ice on them but definitely not thawed
