I'm the type of person to never read a book twice. I apply that to meals as much as I can. It gives me a false sense of moving forward in life. If I'm not moving forward than I might as well kill myself.

Sometimes it's just because importing authentic ingredients is too expensive especially for a new immigrated population. You can usually find authentic stuff if you look around in busier areas but obviously you'll have to pay more.

Go get yourself a 100 year old cookbook for the cuisine you want to learn to cook. Fairly simple to find out of copyright online at places like Archive.org

You'll be amazed how plain the food is. Even "French Cuisine" of 100 years ago will seem boring. We made a lot of progress in that 100 years.
