the egg is so versitile and my very favorite food but I'm embarrased to say that i'm missing out on so much, I kind of remember making frittata in 7th grade home-ec but I couldn't make one. how do you make yours?'
I've also never tried hollandaise or bernaise
I've never cut the whites away from an over easy egg and ate the runny yolk in one bite. that just seems wrong but very right at the same time
I've never had eggs bennedict obviously, never had steak oscar. saying these things, I would think that this person hates eggs

Perfectly soft eggs need exactly 6 minutes in boiling water. And by 6 minutes I mean 6 minutes and 0 seconds, running them under cold water for a few seconds after taking them out is also important. Oh and never take them out of the fridge before putting them into the water, it'll just mess with the timing.

They objectively last longer that way. Yuros that don't refrigerate eggs habit this out by buying less eggs more often, or just owning chickens or living next to chicken farmers where you can reliably get eggs every single day.

This is bait. But, just in case anyone stupid is reading, the real reason is that American eggs are powerwashed and their outer layer of shell is destroyed, causing the eggs to become semipermeable. If they are not refrigerated, bacteria can get in.

>The egg weight loss in eggs stored at 5 °C significantly (P<0.01) lower than the eggs stored at 22 °C group for the entire storage period. The eggs stored at 5 °C showed higher levels of specific gravity than eggs stored at 22 °C throughout 28 days of storage (P<0.01; P<0.05). The albumen height, Haugh unit, and yolk index of eggs stored at 5 °C was significantly (P<0.01) higher than that of eggs stored at 22 °C during the storage periods. The albumen pH of eggs stored at 5 °C was significantly (P<0.01) lower than that of eggs stored at 22 °C during storage period. The results indicated that the eggs stored at 5 °C are better off in terms of protecting quality compared to the eggs stored at 22 °C throughout 28 days of storage

>In the analysis of the correlation with egg quality, the storage temperature exhibited a higher correlation coefficient than the storage period. In conclusion, storage time and temperature are the major factors affecting egg quality, but the storage temperature is a more sensitive determinant of egg quality deterioration compared with the storage period.
https://www.researchgate.net/publication/301738934_The_Effect_of_Storage_Period_and_Temperature_on_Egg_Quality_in_Commercial_Eggs
>The main factors influencing internal egg quality are duration and temperature of storage, and there is a significant interaction between these two factors. Within 28 days of storage the changes in egg weight, Haugh Units and air cell size are not critical if eggs are kept at 6 °C, but there is a rapid loss of quality at temperatures of 15 and 22 °C.
http://www.ltz.de/en/news/lohmann-information/Effect-of-Storage-Conditions.php
>Less than 24 h at 22°C had a greater impact on yolk shape measurements decline than 15 wk at 4°C (P < 0.05).

>how do you make yours?
not that poster but this is a pretty simple easy to follow frittata base for any ingredients to be added:
21 eggs
1 cup full cream
1 cup parmesan
2tsp paprika
1Tbsp seeded mustard

now you can basically add anything you want into that mix it together and spread in a pan

>cook at 180c in a oven pan of any kind
>take out of oven when it springs back when pressed lightly

few ingredients that are all 10/10 delicious:
-sliced cherry tomatoes ontop
-crumbled feta
-leek/silverbeet wilted in pan with garlic

Let me give you a tip, straight out of /fit/.

When I was a lad, I ate four dozen eggs every morning to help me get large. Now that I'm grown, I eat five dozen eggs and I'm roughly the size of a barge.

Eat your eggs.
