As sad as it may sound, my first memory of food is Stouffer's salisbury and mac. My mom couldn't cook so I ate quite a few of these.

Nowadays I can't stand the beef they use. I don't know how I tolerated it. But I keep my freezer stocked with the macaroni and cheese dinner. I make my own steaks and onion gravy. Eat this a couple times a month.

Because you didn't know any better or didn't care because you were hungry. They may have changed the rebuild since you were a kid also. The texture is pretty bad because it contains textured soy protein. I bet it was more meat or at least the filler was oats or bread crumbs instead of TVP which always has the texture of rubbery gristle.

Oh I assumed you had it at a restaurant or something. The proper texture should be similar to meatloaf. People like the TV dinners because they take 3 minutes to cook in the microwave. The texture might be more palatable if you do the oven cooking method but idk. I don't have 45 minutes to waste on a TV dinner and if I'm going to wait that long for a meal I'd rather cook something.

Best cheap Salisbury steak I've had has been a generous patty of ground beef seared on both sides in a cast iron skillet with chopped onion, mushroom, and bell pepper. Once it is browned nicely on both sides, and the vegetables are browned a bit also, cover the meat with beef stock, from bouillon cubes if need be, and simmer for about 45 minutes.

Take the meat out of the pan and put aside in a place where you can keep it warm. The stock and vegetables get thickened into gravy with a cornstarch slurry. Serve on a platter with mashed potatoes and a hot vegetable side dish.

Used to get it as a child sometimes when ordering in a Cafeteria like Piccadilly and getting a "blue plate" special if the other mains weren't what I wanted. It was always good.

Big fan? ehh, it's delicious, but it's about the gravy for your other sides.

it's not just a bunless hamburger though, but a labor of love, it's more like meatloaf, as it's about 20% filler of breadcrumbs or cracker crumbs, and the meat itself is heavily flavored with all the gravy seasoning and added flavors. Going back in time from 50s to 8os when people primarily made this, people used kitchen bouquet, boullion cubes, and glugs of worchestershire pretty heavy handed. It's nicely seasoned throughout with mustard, ketchup, and worchestershire, not just in the gravy. There's a unique flavor.

I never make it at home, far more a fan of dredging a cubed steak through some seasoned flour, browning with mushrooms or onions, and making a pan gravy that way. The fond is well seasoned and nicely browned. I hit the pan with stock or with cream, and it's good both ways and it gets just as tender. Try that OP!

Chopped Steak vs Salisbury Steak
Chopped Steak is actually very similar to classic Salisbury Steak served with onions, mushrooms, and gravy.

However, there are two main differences.

A) Salisbury Steak is almost always made with ground beef, not pure ground sirloin. Whereas, a Chopped Steak Recipe comes straight out of American cattle country, where steak is in abundance.

B) Salisbury Steak usually has a tomato component in the patties or the gravy, so it tends to taste a little bit like meatloaf. Yet, the seasoning in Chopped Steak focuses more on accentuating the steak flavor.
