I’ll admit it’s sounds fucking stupid. That’s like saying my hobby is cleaning guns. I would say shooting is my hobby and most people understand that includes cleaning, maintaining, target practice, and even gun smithing and engraving. If you said knife collecting then that’s different as it is implied you must do some sort of maintenance to your collection. But again if you just say I sharpen knives, that’s really retarded and cringe.

Knife sharpening isn't a hobby unless you go do it for other people for free, otherwise all it is, is keeping your tools in good condition. I love saltwater fishing but keeping my reels lubed and rods stored properly, hooks sharpened and building rigs isn't a hobby, it's making sure my shit runs well next time I go fishing.

Yes it is turbo-cringe. I've got about $1500 worth of knives and stones and I think about what to buy next multiple times a day. It's been like this for years. And I will never, EVER admit that to anyone I know IRL not even my family. It's not as bad as admitting how much time I spend on 4chan but it's still pretty bad.
