Love a pickle. Currently got about a dozen or so active ferments at the moment; some red sauerkraut, Napa cabbage kraut (my new favourite), beetroot kraut, apple coleslaw, winter squash, sour cream and some pickled limes. I also keep a rotation of classic pickled cucumbers for sandwiches/burgers, pickled beetroot, classic sauerkraut, a few kimchis and a few hotsauces.

I'm going to lacto-ferment some radishes this week but I'm not sure whether to do them with just salt or add a spice mix? Open to suggestions

There's more than one way to do it but first I throw as many limes as will fit in the jar then add 3 so I know how many to prep. Sterilise your jars.

>Cut the ends off
>Slice about 2/3 of the way down lengthways and then slice across again (so it's like an X)
>Pack with salt
>Add to jar. Compress to release juice.
>Top up with lime juice if you have any, if not add a brine of 2 tbsp to 500ml water.
>Allow to ferment for at least 3 weeks.
>Refrigerate

Optional: you can add chilli and coriander too but this with limit how you can use them later.

Some people eat them as a snack as the acid content is much lower and the saltiness makes them lipsmackingly tasty. You can use them in spicy salads, in chutneys, make traditional Indian lime pickle, use them in desserts. Just don't cook them for long or the subtle taste disappears. You can also use the leftover brine to make delicious salty lime-ade afterwards. Much tastier than it sounds and great on a hot day.

Microbial spoilage stops at 2% acetic acidity (vinegar). As long as you make sure you hit that (calculated by the weight of the entire batch, not just the brine) you should be fine. Also keep everything submerged.

Salt and sugar also inhibit spoilage but you need about 10% salt or 50% sugar so proper acidity is the best bet.

Ill throw my hat in the ring and say pickled greenbeans are fucking fantastic. Whats everyone's favorite kinds of pickles? Lately I've been on Claussin spears, van holtons hot mamas, Aldis atomic spicy and buying in bulk from chilis. Everyone responding are huge faggots, including myself, but it really should say "best pickle in the Americas" or "north America".
"America" by itself is somewhat meaningless and generally only used to refer to the US colloquially.
That said, maybe they meant the best pickles in the US. We can get foodstuffs from pretty much any country in the world relatively easily and affordably, despite the obsessed memester crying.
