It's how our bodies are made. They're made to receive carbohydrates as energy.
It has a back up system just incase if carbohydrates run short.
It starts breaking down proteins which provide a less efficient amount of energy. Same with fats.

I'm underweight and eat a ton of carbs. I also eat lots of vegetables and chicken thighs. Some days I don't eat because I'm too lazy and moved into a house with a shared kitchen. the problem is with eating fats and grains at the same time, not just grains, most people get too much fat in their diet, like if you eat a slice of toast with butter theres almost as many calories comming from the butter than is from the toast, so most of the foods people think of as "high carb" arn't actually that high in carbs, it also matters the source of the carb in nature most carbs come with fiber which inhibits the insulin spike that you'd get from white pasta/bread, if you eating lots of carbs from a good source and keep fats low (like <10-15% of calories) then its pretty difficult to gain weight from grains, ive lost plenty of weight eating just grains and ive lost lots of weight on keto, I just choose grains because I like them more and im not constipated lol

The elephant in the room about this is that obesity causes diabetes for the same reason a high fat (particularly saturated) diet does. Insulin can't work efficiently with globs of fat floating around in transport in your bloodstream. The less efficient insulin is, the more your body makes to try to compensate.

People think if they cut out sugar and eat nothing but fat, they'll get better at digesting carbs somehow. If they lose weight, they'll probably see some improvement since you can't eat as much fat as your body can store, but there are people who go from normal to diabetic after eating keto for a while because all the saturated fat ruins their insulin receptors
