I never understood why these were the stereotypical "gross" vegetables in American culture. I don't particularly enjoy them but they're not bad either. Pretty tasty when they're charred and roasted.
Children need to shift their hate from brussels sprouts to bell peppers. Bell peppers are trash. They taste like lawn clippings smell. Their only purpose is for meal preppers to add color to their disgusting boiled chicken breast and white rice meal for instagram points. Almost every other vegetable tastes better and is more versatile than bell peppers.

Cut in half, tossed in olive oil, black pepper, little lemon zest, oven roasted flat side down at 400 degrees for ~20 min (just until the outside blackens a little bit), salt and fresh squeeze of lemon that I used for the zest. I eat this 2-3 times a week as a side, I'm really enjoying them while they're in season right now.
