Getting a good black and blue steak is pretty hard. Even if you let the meat sit to get up to temp and then grill it over a stupidly high flame, you still have a 50/50 chance of it turning into a sloppy mess. I recommend serving with potatoes to soak up all the meat juices.

I really only like medium, sometimes medium rare depending on the cut.

Idk if its just me but when the cook gets very rare I feel like I can really taste the grassy flavor/whatever the cows diet was on the meat and it becomes a bit overwhelming

if there were bacteria on the knife, sure. The reason it's fine to eat it like that is that you can keep it rare inside while still raising the temperature sufficiently to kill most bacteria, and bacteria aren't really the big concern when you have raw meat- it's usually parasites.
